Hella Quarantine - E1: Sweet Lime and Lemon Bars

We had a beautiful day here in San Francisco, so we decided to hit up the Farmers Market. While enjoying the scene with all the fresh fruits and vegetables available, we came across something we’ve never heard of before - Sweet Limes (see photos below compared to the regular lime). The farmer said it was a must try and it was not like the limes that we’re used to, rather they are sweet and enjoyable like an orange - right then I was sold. After tasting the fruit, I thought to myself that this would be fantastic with a traditional lemon bar. On the bottom of the bars, you have a buttery shortbread crust with a perfectly balanced sweet lime and lemon filling that is guaranteed to please a crowd. Try it out and let me know what you think!

What you need:

  • 2 sticks unsalted butter - make sure it’s at room temperature

  • 1/2 cup of sugar

  • 2 cups of flour

  • 1/8 teaspoon of kosher salt

Filling

  • 6 large eggs (room temp)

  • 1.5 teaspoons vanilla extract

  • 2 tablespoons of sweet lime and lemon zest

  • 1 cup of sweet lime and lemon juice (2x sweet limes, 2x lemons)

  • 2 cups of sugar

  • 1 cup of flour

The Deets:

  • Preheat the oven to 350 degrees.  

    Crust:

  • Using an electric mixer, combine the softened butter and sugar until it is a pale light color - about 1.5mins.

  • In a separate bowl, combine the four and kosher salt.

  • Add the flour and salt mixture to the butter and sugar and mix until your you start to form a soft dough.

  • Dust some flour on your counter (and some on your hands to avoid the dough sticking) then pour the dough on the counter to form a ball. Using your hands, evenly press the dough into a 9x13 baking pan or pyrex leaving about 1/2 border on the edges.

  • Bake for 18-20 mins until the crust is a very light brown (don’t overcook because it will go back into the oven with the filling). Do not turn off your oven.

  • Allow to cool while you work on the filling.

    Filling

  • In a bowl, whisk together eggs, vanilla, sweet lime and lemon zest, sweet lime and lemon juice, sugar, and flour. Pour the filling over the crust and bake for 33-35 minutes until the filling is set.

  • Allow to cool, then into squares and ENJOY!
