Chewy Brownie Peanut Butter Cookies

These CBPB cookies are hella good! I have to say that these cookies give me the feels, meaning all around feels that feed my cravings for chocolate, while not denying my love for peanut butter. It’s a fudgy brownie like cookie with peanut butter morsels throughout - it’s simply sweet satisfaction.

The cool thing about these cookies are that they don’t spread much in the oven, so they become these bite-size cookies that are the perfect 3 bites that will guaranteed have you reaching for 2 (or 3, no judgement) more! Highly recommend you trying this out.

Decided to make this one night during our shelter-in-place, with of course, a drink in hand (haha). Enjoy!

What you need:

  • 1 cup + 1 tablespoon all-purpose flour

  • 1/4 cup unsweetened cocoa /dutch-process cocoa powder

  • 1 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 2 large eggs

  • 1 teaspoon pure vanilla extract

  • 5 tablespoon unsalted butter, softened to room temperature

  • 3/4 cup packed light brown sugar

  • 1/4 cup granulated sugar

  • 1 cup bittersweet chocolate chips (for melting)

  • 10oz (1 bag) peanut butter chips

The Deets:

  • Sift together flour, cocoa powder, baking powder and salt in a medium bowl. Set aside.

  • Melt the chocolate in the microwave for about 1 minute. Stir. Continue to melt in 30 second increments until fully melted and smooth. Set aside.

  • In a small bowl, whisk the eggs and vanilla. Set aside. With an electric or stand mixer with paddle attachment, beat the butter until smooth and creamy – about 1 minute. Beat in the sugars, scraping down the sides every 10 seconds or so.

  • Mix in the beaten egg/vanilla until incorporated. Add the chocolate in a steady stream and beat until combined. Add the dry ingredients on slow speed. Fold in the peanut butter chips. Don’t over mix at any point in this process.

  • Chill dough for at least 30 minutes. Preheat oven to 350°F. Line baking sheets with parchment paper or silicone baking mats.

  • Scoop about 2 Tablespoons of dough and roll into a ball. Bake anywhere from 10-12 mins or until the cookies have just begun to set with the centers still appearing very soft. They will firm up as they cool. I found that 11.5 minutes are the best for my oven. 

  • Cool cookies on the baking sheet for at least 5 minutes before transferring to a wire rack to cool completely.
