Ube Vanilla Cupcake

It’s all about cupcakes today! Check out my ube vanilla cupcake topped with ube cream cheese goodness. This cupcake is special to me in so many ways…. but thankfully the recipe is super easy and not to mention hella good! It’s perfect for a quick weekday treat and will only take 20mins to make.

Real talk, these cupcakes are really good. They have a semi crispy exterior with a super moist and perfectly sweet cupcake, finished with that “tang” you get from the cream cheese topping. I literally ate 2 of them before we were even able to photograph them =)

What you need:

For the cupcakes

  • 1 and 1/4 stick unsalted butter at room temperature

  • 1 and 2/3 cup all purpose flour

  • 3/4 tbsp baking powder

  • 1 and 3/4 cup sugar

  • 2 teaspoons vanilla extract 

  • 1/2 fresh vanilla pod

  • 1 teaspoon salt

  • 3 teaspoons ube flavoring 

  • 3 egg whites room temp

  • 3/4 cup milk room temp 

For the ube cream cheese topping 

  • 4 cups powdered sugar 

  • 1 package light cream cheese

  • 1 and 2/3 stick unsalted butter softened

  • 1 teaspoon vanilla extract 

  • 1 teaspoon ube flavoring 

Deets

  • Preheat oven to 350 F. 

  • Using an electric stand mixer on medium speed, cream butter, baking powder, salt, sugar, vanilla extract, and ube flavor for 5 minutes until the ingredients are fluffy and incorporated.

  • Turn the mixer to low speed, then add egg whites and incorporate until incorporated fully into the batter.

  • Scrape 1/2 of the fresh vanilla pod into the mix. If you don’t have this, you can add 1 more teaspoon of vanilla extract.

  • Add 1/2 of the flour and continue mixing. 

  • Add in half of the milk, then mix 

  • Add remaining 1/2 of the flour. 

  • Add the remaining half of milk, mix until incorporated.

  • Spoon into the cups until they are 2/3 full (about 2 scoops using the 2 tablespoon scooper)

  • Line a muffin pan with cupcake liners. Bake in a 350 F oven for 20 minutes or until a toothpick inserted at the center of a cupcake come out clean.

  • Cool completely

For the Ube cream cheese topping 

  • Using an electric mixer, mix cream cheese and butter together until incorporated. 

  • Add powdered sugar, then mix. 

  • Add ube flavoring

  • Add vanilla extract

  • Place in a piping bag or frost on top of cupcakes free-hand.
