Funday Brunch Bake

Baking is not all about sweets in my book, it’s also about the savory! Meet my Funday Brunch Bake, guaranteed to be a show stopper and satisfy that brunch craving, especially after a fun night. This layered casserole starts with your aromatics from the onion and garlic base, savory full favor turkey sausage (yes! turkey - and it’s not dry at all!), the nutty flavor of Swiss Gruyère cheese, topped with croissants torn for that rustic and crispy bite.

The Funday Brunch Bake is hella easy to make, but gives your lucky eaters the illusion that you’ve spent all morning putting this together. The bake also travels well, so you can pre-cut them into squares and trust, they will be just as delicious at room temp. 100% this will make our menu for the next hosted brunch sessh with family and friends (once this quarantine is over!).

What you need:

  • 2 tablespoons of olive oil

  • 1 large yellow onion, sliced thinly

  • 5 garlic cloves, minced

  • 1 1/4 lbs turkey sausage - about 5 links or you can use bacon (8 slices) or 2 cans of spam (<— so good!) 

  • 1-2 bunches or 1 package of fresh spinach

  • 1 1/2 cup shredded Swiss gruyere cheese (or mozzarella) 

  • 12 eggs

  • 1/2 cup milk

  • 1 1/2 tablespoon dijon mustard

  • 2 teaspoon salt

  • 1 teaspoon of pepper to taste

  • 5 small croissants

The Deets:

  • In a large pan, add 1 tablespoon of olive oil on medium heat. Add the onions and cook slowly for 30 minutes. You want to caramelize these onions to bring out that dark brown goodness. 

  • Add minced garlic and cook for 2-3 minutes. 

  • Add sausage until browned. Add spinach. Cook until spinach is wilted (happens pretty quick). Remove from heat.

  • Whisk eggs with the milk, dijon mustard, salt, and pepper.

  • Preheat the oven to 350 degrees. 

  • Grease a 9×13 baking dish. Layer the sausage, spinach, onion, and garlic on the bottom. 

  • Add half of the cheese on top of the sausage layer.

  • Pour eggs into the baking dish.

  • Tear the croissants into pieces on top. 

  • Add remaining cheese on top. 

  • Cover with foil. Bake for 35mins, depending on oven and pan size. 

  • Remove foil and bake for another 7-10 minutes. 

  • Cool for 10mins. Slice and enjoy.
