Italian Pear Cake

Baking inspiration this week are Pears! I have to say, this is a beautiful dessert ... photographed nicely! This is my Italian Pear Cake. I’ve never had a pear cake until this recipe. Anytime I add both the mascarpone cheese and greek yogurt, it makes for a moist and soft cake. Also when this bakes up, it’s beautiful! It has a crispy top and edges all of us love and adore. What I love about this cake is that it’s not too sweet. We usually have this in the morning with my matcha latte or the other half has it with their coffee and it pears (pun intended!) nicely with either one. Sorry I had to.

What you need:

  • 1 1/2 cups all purpose flour

  • 1/4 cup + 1 1/2 tablespoons cornstarch

  • 1 1/2 teaspoons teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/2 cup unsalted butter (room temp) 

  • 3/4 cup sugar

  • 3 large eggs (room temp)

  • 8oz mascarpone (room temp)

  • 1 cup Greek yogurt 

  • 2 1/2 tablespoons canola oil

  • 1/4 teaspoon salt

  • 2 pears (room temp) 

The Deets

  • Pre-heat oven to 340° 

  • Prepare (butter and line with parchment paper) a 9" cake pan or spring form pan. 

  • Dice 1 pear into medium-sized cubes (for inside cake)

  • Slide 1 pear into thin slices (goes on top of the cake)

  • Using an electric mixer, whisk eggs, butter, and sugar until creamy, add mascarpone and continue beating until smooth.

  • Add Greek yogurt until incorporated. 

  • In a medium bowl, whisk together flour, salt, corn starch, baking powder and baking soda.
    Using a spatula, stir in flour mixture into the wet ingredients mixture, stir gently to combine, then add the oil and stir to combine.

  • Fold in the cubed pear until incorporated. 

  • Top with sliced pears and sprinkle with 2 tablespoons of granulated sugar on top.
    Bake approximately 45-50 minutes, or until toothpick comes out clean. 

  • Allow to cool for 20 mins. 

  • Finish with powdered sugar on top prior to serving.
