Mini White Choco-Chip Cookie Cups
So check this out.. I was thinking of making some good ole’ white chocolate chip macadamia cookies, but wanted to slightly change it up, so I made bite sized white choco-chip cookie cups.
Real talk, this cookie is good eats, like ellla good! The cookie itself has way less sugar than your traditional chocolate chip cookie, but you actually don’t miss it because in every bite, you get the sweetness from those white chocolate chips throughout. This recipe literally took me less than 10 mins to make, and since it’s a quick 11mins in the oven, you can literally have fresh baked cookies at home in less than 30mins. What you need
1 stick unsalted butter - room temp
3/4 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
1.5 cups flour
3 tablespoons coca powder (I user Hershey’s)
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons whole milk
3/4 package of white chocolate chips
The Deets
Preheat oven to 350 degrees.
Line a mini muffin pan with cupcake liners
Using an electric mixer, cream the butter and sugar on medium speed.
Add the egg
Add vanilla extract. Mix until incorporated.
In a small bowl, whisk dry ingredients flour, cocoa powder, baking soda, and salt.
Add to the mixer on low speed until incorporated.
Add whole milk and mix
Hand stir 3/4 bag of white choco-chips using a rubber spatula or wooden spoon.
Using a 1 tablespoon scoop, place a scoop in each of the mini cupcake liners.
Flatten the balls slightly with your palm. Wetting your hands with some water first helps the dough not to stick.
Press the remaining white chocolate chips into the surface of each piece of dough.
Bake for 15-17 minutes.
Cool completely and enjoy
