Grapefruit Mascarpone and Yogurt Loaf

It’s all about grapefruits this week! ❤️ 

I have to admit, I’ve never baked using grapefruits before so I decided not to go over the top and make something simple and easy…. that said, here’s what I ended up with this… a Grapefruit Mascarpone and Yogurt Loaf! I tried 2 versions - one using lots of butter, and one using oil and the combo of yogurt and mascarpone cheese. Honestly, the one with butter was goooood, but it’s. not the healthiest. So I decided to go with the yogurt mascarpone cheese combo, but also with some vegetable oil to add moisture. Also, I initially thought that the grapefruit. would make the cake have some bitter notes, but nope.. it was perfect, with no bitter taste at all. The cake is not too sweet and has those citrus notes throughout - almost tastes like an orange cake. Lastly, the grapefruit glaze on top completes the citrusy fresh taste of the cake, which makes it impossible to not have another slice. Enjoy!

What you need:

  • 1.5 cups of flour

  • 1.5 teaspoons baking powder

  • 1/2 teaspoon salt

  • 3 large eggs

  • 1/2 cup greek yogurt

  • 1/2 cup of mascarpone cheese 

  • 1 cup light brown sugar (packed)

  • 1/2 cup vegetable

  • 1/4 cup fresh grapefruit juice

  • 1.5 tablespoons grapefruit zest

  • 2 teaspoon pure vanilla extract

Grapefruit Glaze 

  • 1 cup powdered sugar

  • 2 Tablespoons fresh grapefruit juice

  • 1/4 teaspoon pure vanilla extract

The Deets

  • Preheat the oven to 350°F 

Glaze

  • Whisk the ingredients together. Glaze will be thick. Set aside until cake is completely cooled.

Cake

  • Grease a 9×5 or an 8x4 inch loaf pan.

  • In a medium bowl, beat eggs. Then whisk in the yogurt, brown sugar, oil, grapefruit juice, zest, and vanilla extract.

  • Using a large bowl, whisk  flour, baking powder, and salt together.

  • Pour the wet ingredients into the dry ingredients and hand mix using rubber spatula. Try not to over mix.

  • Pour batter into the loaf pan. 

  • Bake for 45-50 minutes (depending on the pan). 

  • The cake is done when a toothpick inserted in the center comes out clean. 

  • Allow to cool before drizzling with glaze.
