Scotchie Squares
These squares are the first thing I think about when someone says butterscotch. The old-fashioned oats in these squares provide that chewy bite, which is a great combination with the butterscotch morsels hitting you with that pop of sweetness throughout. Although these squares are mostly chewy, they do bake up with crispy edges that add the texture you’re looking for when craving that perfect bite. Since there’s a fair amount of oats in there helps to ease the guilty feeling of indulging in these scotchie squares!
Tip: To get these perfect squares, I used a brownie pan, which is just the right thickness while still making them easy to portion out.
What you need:
1 1/4 cups all purpose flour
2 large Eggs
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 sticks unsalted butter (room temperature)
1 teaspoon vanilla extract
3/4 cup brown sugar packed (make sure it’s fresh and soft)
3/4 cup sugar
2 1/2 cups old-fashioned oats
11 oz bag of Butterscotch morsels
The Deets:
Preheat your oven to 375 degrees
Sift the flour, baking soda, salt and cinnamon in small bowl.
Using an electric mixer, mix butter, granulated sugar, brown sugar, eggs and vanilla extract until the mixture is light and fluffy.
Gradually mix in flour mixture.
Stir in oats and morsels.
Bake for 6-8 minutes (chewy) or 9 to 10 minutes (crisp). Cool on baking sheets for 2 minutes, remove to wire racks and allow them to cool completely.
For cookies: Drop by 1.5 tablespoon on a baking sheet
